Hi was just wondering if a person holding a Thai and Uk passport can on leaving the uk use

any help would be nice

Normal procedure would be to enter Thailand and leave Thailand on the Thai passport, enter and leave the Uk on UK passport.

At check-in at the airport show the airline both pasports to confirm that you don't need a visa.

You show both to airline if they question the need for a visa - you only show the one of the country you are in to immigration. It is not wrong and for the US it is required that you only use your US passport for entry/exit of that country by law.
