My Turkey Dinner

Sorry, just wanted to post.;I just finished a turkey dinner. I brought the turkey with me from the US, a nice Butterball.;It was a little small, bot for two, and for sandwiches later, it was fine.

I brined it for 24 hours in salt, brown sugar, oranges, limes, rosemary, and thyme. Then I stuffed it with an artichoke-apple-shitake-sage sausage stuffing and basted it with a rosemary butter sauce.;The skin was tasty, and even the white meat was moist. The mashed potatoes were normal, but the gravy was a cognac gravy made with the nice amount of turkey drippings along with a small bit of stock made from the gizzards.;Ocean Spray cranberry sauce and a simple orange-marshmellow salad (a taste from my childhood) made the rest of the meal.

Sandwiches tonight! (But I can't get too full as I am meeting a friend at the Sukothai brunch tomorrow.)

I can honestly say it sound terrible. But it look's good. I was a chef in my younger year's, and if I had put that on the menu would not have sold one. But then again I'm English, It must be an American thing. But what's fascinate's me is the Orange/Marshmallow salad how is it done not that I will try it, as I hate Marshmallow's, just very curious as I have seen many salad's in my life I can't even visualise a marshmallow one.

I am not fond of marshmallows, either. But this has been a Thanksgiving staple since I was a child.

It is very simple. Canned mandarin orange segments, the little tiny marshmallows, and sour cream. That is it. It does not sound good to me, but the taste is good and very comforting.

You have used Hershey's for the chocolate? Was that OK, not too sweet? I would add cumin, oregano, garlic, chili, and a bit of stock as well, but your suggestion has my mouth watering already.

never tried the Hershey's syrup but read about some one being successful once with left over turkey...they must've added some other ingredients to cut the sweetness...also in the original mole recipe there are about 5 different types of chiles...

on the marshmallow issue, at Xmas me mum useta make a savory sweet potato pie with marshmallows on top like a 'crust'...my grandma's recipe and always a big hit...never fancied it meself, don't much like sweet potatoes...

Turkey sounds wonderful :licklips:. Think l would pass on the Marshmallows though. Good stuff. :D

Thank's for that, Canned Orange and the sour cream. Not quit the same but we have apple sauce with pork. Yes I can go for that with the juice more like a dessert. Without the juice and with the M/M the sour cream bit would cut out some of the sweetness. Can now see how it would work. Us English what do we know. But I still don't think I'll give it a try all to sweet for me.

can you bring a dead bird in a suitcase to Thailand? I thought since the bird flu outbreak it is prohibited to bring dead birds to thailand in ya suitcase. and how did ya keep it fresh was if fozen when you left the US!

I'm sure most peep's know but Makro Carefour before it became Big C + many other's sell butter ball turkey's.

I pretty much always have applesauce with a pork roast. or even soem pork chops recipes.

I have done it quite often. I put a frozen turkey in a freezer transport bag, tape it up, and stick it in the luggage. I also have sausage, tinned biscuits, maybe a leg of lamb or baby back ribs in along with it. The frozen turkey keeps everything cool, and when I arrive in Bangkok, it is always still frozen.

I have been checked once at customs here, and they jumped to open my bag to pull out bottles of olive oil which they initially thought were too many bottle of booze. They never gave the turkey a second glance.

I know I can buy a turkey here in Bangkok, but at $10 in the US vs 2600 baht here, since I have the weight allowance, I usually just bring one with me. I probably should concentrate more on items I can't find here, like Diet Dr. Pepper, certain spices, and so on, but I always do bring some sort of meat with me.

Why would that piss me off? The marsh mellows will go down well after we burn the turkey stuffing!

i have had to make do with nz lamb and celery,what would i do for a nice leg off blodwyn.
