My spouse and I are already in the united states, I'm a u.s. citizen and she is here on a tourist visa... plans have changed and we need to apply for a green card for her. In the I-130 instructions it says we can file the I-130 and I-485 at the same time. I'm wondering what the pros and cons are of doing it concurrently vs separately.

There is no con to it. If you are trying to adjust her status here in the US you need to file both of them. If she wants to go to Thailand to pick up the visa skip the I-485.
