I have an American passport and came to Phuket on a visa exemption (30 days). I just realized my 30 days are up on Sunday, but the Phuket immigration office is not open until Monday. Will I be able to extend the extra 7 days on Monday, even though I've already overstayed by one day? Also, do I need to show a plane ticket leaving the country in order to get an extension? (I thought I read that somewhere.) The problem is that I don't have a plane ticket out of the country and was thinking of going to Myanmar by bus after the extension is up.

A normal extension can be obtained on next working day. And I believe they are being very liberal with this 7 day non approved extension currently so you will likely get it approved and not be required to show ticket.

Phuket immigration office (main one at Saipan Hin) has a fairly amenable group of officials and the new supervisor is easier than the previous. There is a table on the left side of the entrance with some us/Euro auxiliaries that are ready to help if you need any. The desk you want is immediately in front as you enter the office, but best to go to extreme left end where there is a stand with forms. Find and fill out the form for extension before going to desk.

Best to get there early, say 9AM because the crowd builds up. Lunch 12-13 the place is closed.
