Get a pigs head boy, and tell him to leave the eyes in, it will see us through the week,,

having worked in a pork abattoir some of the time we were required to slice off the jowls for sausages, salami etc, quite a lot of fatty meat in there, special requests for the eyes were common, here's looking at ya

Pickled pig's tongue is one of my favorite snacks. My mother used to make it fairly often and now my Thai wife has learned to make it for me. Don't knock until you try it.

I use to eat pigs tongue as a child, I loved it, but don't think it can be bought anymore. Also ate pigs feet (crubeens/trotters) and pigs tail.

Pigs tongue are available everywhere in Thailand as are pigs trotters!

Check out local markets.

I said "off" a pig's head. Anything inside it you can keep. There are so many delightful things to eat that I will leave all the awful offal alone.

Can I suggest if you want to be accepted by your family, it is customary to put the pigs head on you a bit like a hat or a face mask and run around making grunting noises singing Hall-i-loo-ya. Then you WILL be accepted as you are now the family piggy bank.

Now your family found out about you, guess what, you are the ATM, welcome.

Codswallop ! my mum used to make the most delicious 'Braun" all from a pigs head !

I did this ceremony before my wife came to Thailand (in Buriram). It had something to do with safe travel, good luck, and so the ancestors will know what is going on, etc. etc. etc.

The pigs head (uncooked) was presented on a platter with flowers, candles and incense. Some prayer were given by the village elders, and cotton string was tied around both our wrists. All this only takes a couple of minutes, and then the head was taken away. About 30 minutes later a whole bunch of food (guess where this came from) was served to everyone that was in attendance. Lots of beer and rice whiskey.

My wife says that this is common in the country (especially Issan), but not so common elsewhere in Thailand).

Pigs head= very tasty stuff with chili sauce. Some of the very best parts of the pig are in the head.

laugh.png Seen a Pig's head offered to Buddha many years ago in a Chinese/Vietnamese temple before in Saigon.

After the offering was completed, the Pig's head was removed,from the alter, and then the edible parts were devided up anong the guests at the ceremony.

The Pig's ears are comsidered a delicacy .... but I don't know why.

I agree, there's not much I would want to eat on a Pig's head.

I'll take a nicely baked Canadian salmon instead, thank you. Or, a nicely roasted haunch of wild elk meat. Otherwise I'll stick with stir fried rice with pork or chicken. The shrimp in Thailand are tasteless, and the beef is too tough to eat.

agree the thai beef is very tough but try this....marinate in soy sauce and a lot of lemon juice for no less than 6 hrs pref overnight.... this leaves the beef much more tender... boil it in the marinade then take each piece of beef out and gently pan fry it... delicious and the marinade goes nice with boiled rice mmmmmmm

My wife occasionally does the offering in our front yard early in the morning and about noon, after the local flies have laid all of their eggs, there is a big feast. She says it's an offering to the spirits.

However, pigs cheeks are very delicious if cooked properly. They need long, slow cooking. They're incredibly flavoursome and tender when braised or stewed. They should be brined for several days in a mixture of sugar and salt water before being poached until tender and eaten cold or hot. The poached cheeks can also be breadcrumbed and deep-fried.
