I'm wondering how difficult it will be for her to obtain a green card based on my status.

Basically I haven't stepped foot in the USA for the more than 5 years. I dont have any savings to speak of either.

We met in Thailand, together for 2.5 years

She's currently in USA on an Au pair visa.

I'm wondering how much my lack of savings and lack of a solid work history will affect her getting a green card if at all.

I don't believe your lack of savings or work history will affect her ability to get a green card, means testing comes in to play when applying for fiance visa,

she is there now on a work visa and there is no law that prevents people of falling in love and getting married regardless of their economic status.

​Ans since you are an American citizen you can marry her

after getting married, she will have to apply for a change of status (be prepared for some filing fees, and bio metric cost charges)

Since she is there on a work visa, you might need the services of an immigration attorney to help you best navigate the process.

A consultation with an Immigration attorney before you get married might be money well spend and might save you a lot of time, aggravation and application fees down the road
