For those in Bangkok I spotted Waitrose Goose Fat @ Central World (grocery store top floor) today for 269 baht, I picked up 3 - do you think I can freeze it ?

My roasties for Xmas will be perfect now :)

Yes, you can freeze fat...very effectively. To add to this you can buy frozen whole goose in Foodland. I have just ordered a 3kg goose and some turkey breast for our Christmas....happy days :)

Absolutely no need to freeze it (assuming you haven't opened the jars). The main enemy of fat is oxygen which oxidises fats turning them rancid. That's not going to happen as long as the jar is sealed. Check the "use by" date on the jars. It's probably many months hence, if not years.

Draft 3kg aint going to leave a lot of goose for eating but I hope you enjoy it. A tad jealous, will maybe drop in to Pattaya Foodland and have a look see, or did you need to order yours?

Frozen, ordered. Yep, we know. We have 4 adults and 1 2 year old. We also have a 2kg Turkey Breast roast too. Add to that the roast potatoes, stuffing(s), bread sauce, pigs in blankets, veg and gravy. There might be some space left for Christmas pudding and custard.... ;)

Sounds good, picked up my sprouts today (Waitrose frozen sadly) & cranberry sauce & 3 more jars of goose fat - thanks again for letting me know I can freeze it.

Do you use poultry seasoning in your stuffing ? I'm having a hard time finding it.

We'll be stuffing the goose with apples, prunes and cider (Weston's - The Governor) for the cooking. For stuffing we're cheating and we have bought Foodland's sage stuffing to which we'll add any needed flavours when cooking. With family here for 10 days and a 2 year old running about any time saver for Christmas day's cooking is a winner!
