Return flight later the Visa validity

I want to enter TH on a Visa on arrival 30 days. I want to book return flight before i enter TH but flight would be 1 week later then Visa validity. My plan is to extend the Visa in TH.

Must i expect any problems with immigration or with airplane company?

Yes, you could encounter problems without proof of onward travel within 30 days, depends on how strict the airline is with their enforcement. It would be helpful to know your nationality, are you actually entering on a visa on arrival, or visa exempt entry? Perhaps less expensive to apply for a Tourist Visa.

Book the flight for 30 days then pay to change the ticket. Do a visa run.
