I was offered a Job in Thailand working for a non-profit art school teaching adults to draw and paint. This is non accredited art school… so there’s no degree when you graduate just a certificate of completion. What are all the documents needed by the Thai government to get a work permit for this job?

No matter what the situation may be regarding the school or your employer you are going to have to get a work permit.

Many people work without them , however if caught you and the employer face some potentially large problems. Sadly the employer gets away a bit more easily than the undocumented worker.

Just wondering if the non -profit is really as they'd told you. Easiest way to be legal would be to start as a volunteer. No Teacher's Council, documents etc..needed. You'll only have to deal with the department of labor.

The organization is an American non-profit...with their headquarters based in Pennsylvania. They want everything to be done legally. This will be their first time operating in Thailand. As of right now they are in three other countries.

You need to work for a Thai entity or the organization will need to set-up shop in Thailand. It is only through a registered charity that you can get a work permit as a volunteer. So the school will have to be established officially, with all correct paperwork.
