I notice that Phak Khom is written two different ways:

ผักขม - and - ผักโขม

Are these both the same thing?

At the risk of being corrected by someone who knows better, both are usually translated into English as "spinach". However, ผักขม specifically refers to Amaranthus spinosus, whilst ผักโขม refers to a range of similar species - most commonly Amaranthus lividus.
