Sardines for pickling

I rinsed some canned sardines and pickled them and they turned out surprising eatable. However, I'm looking for that soft texture like rollmops so I'll need fresh sardines. Can anyone suggest places to buy them in Bangkok or alternative fish to use and also pickling recipes.

Roll mops are usually made with herring, but it is not available here.

The next best thing to use, and in abundance here, is mackerel.

I get mine from Tesco and ask them to fillet it for me.

Roll mops can be called various names depending on the part of the world you come from,….

seen them called potted herring, soused herring or pickled herring.

To me a roll mop is baked in a pickling liquid, in the oven.

I would buy herring if they were available here. I thought they were pickled from raw but I wouldn't risk that with Tesco fish. I saw some Indian mackerel in Tesco and saw a recipe that calls for it to be filleted and boiled before placed in the pickling liquid and refrigerated. I'll give that a go.

Herrings are available in Pattaya, there is a Dutch guy, who imports them, but far too expensive,.

Mackerel can't be used because the flesh is way to soft.

I made numerous experiments with different fish species, but only Pla Gulae (ปลากุแลกล้วย / RAINBOW SARDINE ) is more or less usable.
