I am from the UK and have been staying in Thailand since April , first of all with a triple entry tourist visa and then with a 30 day visa exempt on entry extended by 30 days . This ends on the 9th January . I will be returning to the UK in March , so I'm looking for the best way to stay two more months .

I will be flying to Singapore for a few days leaving on the 9th January and was going to travel on to Penang for a single entry tourist visa , but perhaps another visa exempt on entry with 30 day extension is possible after staying in Singapore. What would you advise ?

You should try applying for tourist visa in Singapore. If denied then come back visa exempt. You do not need to go to Penang unless you want to visit the place.
