Nice easy to make spicey tuna/egg salad for a hot day

Hey all,

Just thought I would share my favorite recipe I make here in Thailand on a hot day, ingredients can be easily bought from anywhere and I find tinned tuna much nicer in Thailand then from the UK:

Ingredients:

2 Tins of good quality tuna steak in oil

4-5 Boiled eggs

3/4 Jar of Mayo

3 Table spoons of Mustard (I prefer the American style stuff)

1 Squirt of tabasco sauce

2 Table Spoons thousand island dressing

2 Peppers

1 Small chilli pepper (to your liking)

1 Large cucumber

1 Pack of cherry tomatoes

1 Red onion

2 Limes

1/2 Tea spoon of salt

1/4 Tea spoon of pepper

Drizzle of olive oil

To make:

1. Get a big bowl and mix up your tuna/mayo/mustard/tabasco/thousand island/olive oil

2. Chop your cherry tomatoes/cucumber/onion/peppers/onion/chilli and throw them in giving them a mix

3. Add your salt/pepper mixing it

4. Chop your eggs up and put them in mixing in (do this last so they are not pasted)

5. Drizzle your oil/lime juice over the top giving it a quick turn over

Boom!, slip that in a sandwich or eat from a bowl, I eat it every week and love it, not the most complicated dish I know but after sampling a few variations I find this the best taste, if you like it hot hot put extra tabasco sauce in.

Fogot to say that should serve 2-3 but im a greedy b@stard so i eat the lot
