September 2, 201510 yr I understand that potato flour and tapioca flour are: Potato flour - PAENG MAN FARANG (แป้งมันฝรั่ง) Tapioca flour - PAENG MAN SAMPALANG (แป้งมันสำปะหลัง) I have described PAENG MAN (แป้งมัน) as flour or starch from a root tuber (potato or cassava), meaning that it could be both potato flour and tapioca flour, however several cooking sites refer to tapioca flour as just PAENG MAN. If that is the case, when the word PAENG MAN is used, is it normally understood to mean only tapioca flour? Thanks for your help.
September 3, 201510 yr Looking at a few recipes, that would appear to be correct. If you don't have it, แป้งสิงคโปร์ is a synonym. Source: https://th.wikipedia.org/wiki/%E0%B9%81%E0%B8%9B%E0%B9%89%E0%B8%87
September 3, 201510 yr Author Dear AyG, Thank you. Yes, it seems that PAENG MAN is generally considered to mean tapioca flour. I appreciate the synonym which you gave me. Interesting name - 'Singapore flour'. Apparently the RTGS reads as PAENG SINGOKPO.
September 3, 201510 yr Author I just tried the RTGS reading again, by removing PAENG and it came out as SINGKHAPO, which is better.
