September 16, 201510 yr My next project is to build a brick BBQ with Smoker. Something like this https://s-media-cache-ak0.pinimg.com/236x/89/63/a1/8963a14d958167855eb4a61e34184d84.jpg The right hand side is the smoker, and on the left is firepit and grill. Any ideas on how to make the damper? Which will as low level in the wall between firepit and smoker. Thinking something made of metal which will slide outwards. Also can one get hold of some smoker wood for the fuel. Somebody has mentioned using husk from coconut.
September 16, 201510 yr If you have never done smoking before - the BIG thing is controlling the heat. Some things you want to smoke a long time - others more like a BBQ. Coconut shells are OK for like fish or lamb, something like that. I prefer jack fruit wood for other meats. (That's in Thailand - not easy to get mesquite, hickory, etc.) The best way to control the heat is with dampers in the charcoal pit. The best way to control the smoke is with dampers at the high place for the smoke. If you don't want to experiment, there are smokers you can buy. PM me for recommendation.
September 16, 201510 yr Author I found this instructable http://www.instructables.com/id/Brick-Barbeque/?ALLSTEPS Probably going to be more of a feature than actually use for the smoker. Plus the ones I've seen seem far too expensive. The brick build should be very cheap in comparison.
September 18, 201510 yr Tamarind is another great, hard wood for smoking/cooking with. It is readily available up in the northern part of Thailand....not sure about other locales. pg
