I normally use corn syrup when baking some of my western style pastries that I enjoy on occasion, I have found it in Bangkok but it is quite expensive here, around $5.50 for a very small plastic bottle (500 ml.). It makes sense to me that rice syrup would be much less expensive if I knew where to find it. I have read it is a very good replacement ingredient for corn syrup. I would appreciate it if anyone could tell me where I could find it, or if it isn't typically used here either. Thanks in advance.

Do you really use high-fructose corn syrup in your baking? Wouldn't using a different sweetener be less calorific?

Only on occasion, but to get the right consistency on this particular breakfast Pecan Pastry yes I do need this. By the way I am not overweight or diabetic. Other than that you didn't answer my question. I am fully capable of taking care of myself and counting my calorie intake but thanks for your concern.

He didn't say he used high-fructose corn syrup. He said he used corn syrup. The corn syrup typically used by home bakers is mostly glucose. In fact, you can use glucose syrup as a substitute for corn syrup. You can get glucosesyrup at a baking supply store, The reason that brown rice syrup is a good substitute for corn syrup is that it too is mostly glucose. There is one problem with rice syrup. It's high in arsenic. Better to go with glucose syrup. That's what I use as a substitute and it works great..

Thanks a lot! There is a baking supply store a short walk from my apartment. I will go tomorrow and see if they have the glucose syrup.

Thanks again.
