I am on a 60 day double entry tourist visa from Laos, my time expires December 10th (today). I went to Immigration and saw a sign that said Thai Independence Day Holiday and they were closed. Will I have to pay 500 baht for the overstay or will they not count that day because they were closed?

Also, I am trying to extend my double entry visa 30 days like normal, will this 1 day overstay cause a problem with that?

Since you permit to stay ended on a holiday you will not be charged an overstay fine if you go to immigration tomorrow.

You could applied for the extension before today and lost no days. The extension starts from the date your permit to stay ends.

Thanks guys. I was so worried they would call me an overstay and then not extend my visa because of it. I can relax now, thanks again.

Normally I wouldn't worry, but with all the "heightened security" bull-honkey, never know...
