"Big Wave" in the evening market walking street (between Thai boxing square and the dedicated entertainment area) – and if you wish to try genuine local Thai fod, don't miss "Mr. Dang & Nang" some 30 meters further down the street, a small, very local looking place, where you can order whole fish Isaan-style and other traditional dishes.

The problem with Isaan chefs (cooks really) is that they often have a lesser knowledge of salt water fish for obvious geographic and economic reasons. There is more of a crossover as time passes but historically there are very little by way of non fresh water fish dishes. This 'Issan style' is often a fresh water shrimp dish that has been battered [sic] into a salt water fish dish and sometimes it just doesn't work. I've learned a shedload from Thai chefs over the years and none more important than getting the balance of the dish right. The balance of texture gets flipped to one side or another and there is no way to bring it back. You can play havoc with most other proteins but fish/ seafood doesn't like to be pushed around at all.

I go down to the place I mentioned above and generally take a Thai friend with me to order the food. The menu is also now in English though that is beside the point. If I order then the chances are it will be tourist orientated but if a Thai or my friend orders they can tell them to make it real, no BS tourist food on this table thank you. Prices have gone up a bit but it's better and cheaper than it would be right in town.

Another option I use is to ask the place where you eat most often if you can order what you want for the following day. Give them a deposit and Bob's you uncle.
