I have just obtained my first 60 day Tourist (TR) Visa. What is the easiest way for me to extend this without returning back to Australia?

Thanks in advance for any assistance.

Once you have entered Thailand, and received your 60 day permit to stay, you can apply for a 30 day extension for tourism. It cost 1,900 baht and you apply, within the last couple of weeks, at your local immigration office.

If you are asking about a 1 year extension of stay based on being over 50 (retirement) it's more complicated. First, you will need to apply for a non-immigrant visa (2,000 baht), which you will need to do with at least 15 days of the 60 permit to stay left. Once they have issued you with a visa, and 90 day permit to stay, you can apply for a 1 year extension (1,900 baht) within the last 30 days of the 90.
