I am applying for a single-entry visa from NYC. I am in my late twenties and will be quitting my job.  I intend to stay for 60 days and then extend my visa another 30 days. One of the requirements on the Thai Consulate website is this:

1.        Letter certifying current employment OR a guarantor’s letter from a U.S. resident/affiliated organization

I plan to ask my mother to be my guarantor. Does anyone know specifically what this letter should say, or have a sample by any chance? Thanks in advance.

I think you need to go back and read the page again. That is not needed if you are a US citizen or a legal resident. That is shown here.
