Interesting question:

If an embassy is baraged with so many applicants for visas... do you think they'd be more thorough or less thorough in reviewing each and every visa application?

Some might think that they'd be more thorough because they'd be more "suspect" of why everyone is going to them.

On the other hand, they could end up less thorough because of much more workload on their hands and much more visas to "scrutinize".

I don't think it worries the Thais, if the output is two an hour that's what they do regardless of what's coming in. Working a bit quicker or putting extra people in a busy section never seems to be an option.
