The golden rule always used to be, If you have a problem with a Thai, walk away or somehow defuse it because you ain't going to win. Well I was told differently in a bar/whatever in Bangkok at 20.15. I was told as I stated, by the staff in the presence of the owner, and this was Sukhumvit Rd near Asoke.

I think most places will tell customers they have to order before 9 but can drink till 11. That's the law so why not.

Sorry I did not realise that you were unaware of the expression "they don't get it". In this instance it means that they do not understand that the majority follow the rule. You may think that makes everyone who follows the rule is brainwashed, up to you. The majority of tourists do not come from places where being masked is the rule and so it does not come automatically to them. Whether they think that being unmasked makes them clever I do not know.
