Beer Laos holds up well against competition from a lot further afield than LOS, imo.

Lotus's's's's' do a Penfold's (Koonunga Hill) Shiraz for less than 700 Baht. It's the only time I bother shopping there, tbh.
A local mom 'n pop shop has started selling a range of wines. Usually a bit hit 'n miss obviously for any wine under 500-, but the missus struck lucky with a bottle of dry red named "Knight Black Horse" which was actually very good for a paltry 290 Baht. Certainly avoided it's normal fate as a boeuf bourguignon ingredient, anyway. ????

The queues are always bad at "long weekend" national holidays, and actual weekends starting on Fridays.
I've never had any problems when avoiding these time frames.

Last 20 years? -Personally speaking, I grew up a bit, got married, finally became a father in my 40's. Still working at the company I started here, nearly 30 years ago. Drink a lot less than I used to do, and exercise a lot more.
I go back to the UK at least once a year to visit family and friends, and see a lot of change. Mostly not for the better, imo.
Still, it does give me a better perspective of life here in Thailand, and reduces any mountains back into molehills on an annual basis.

For me it's Kaeng Liang (pumpkin curry), Pad Siew Moo (pork & veg w/ large noodles), and my go-to favourite; Phad Krapow Gai, Kai Dao (Chicken, basil on rice with a fried egg). It's usually the first meal I order any time I come back to Thailand.

^Yep, seems to be a more 'upcountry' phenomenon with the noise pollution thing.
Living in a busy area of Rayong, it's at least quiet of a night time and I usually get a decent night's sleep before work in the morning, same as most of the neighbours, I guess.
If you live upcountry, I doubt there is much you can do to prevent noise. Even industrial ear-plugs don't muffle the bass 'kick' from those huge speakers. Maybe get in some power-naps or "siestas" like the locals during day time?
