As no replies as yet, you could search 'Thai cooking class' in google maps and check reviews. Or ask the mods to move your request to a more specific location such as bangkok, pattaya etc forum.

I hired a chef in between jobs on a casual basis for a couple of weeks and he taught me over 40 recipes in that time. Some of the stuff I videod and so forth. Cost about 3000b I seem to remember, as was just a couple of hours a day. Thoroughly enjoyed the experience, nothing better than learn by doing.
