Just out of curiosity, how would you go about changing areas if, for instance, you wanted to move from Chiang Mai to Bangkok for example?

By formally changing your address at a new immigration office. TM30 or TM28 forms or both.

Ubon, what sort of proof of "new address" would that require. I assume a lease or something similar? Can't imagine a tm30 filed by some hotel would suffice?

It depends upon the office.

A rental agreement with signed copies of the owner house book and ID card is a standard requirement.

But for a 90 day report a hotel might be accepted with proof of are staying longer than a few days and an explanation you are looking for something for a longer stay.
