Sanook reporters went to a large som tam (papaya salad) stall after netizens commented in droves on a video that showed a whole packet of monosodium glutamate  being dumped into a single mortar.

 

Along with the white powder that Thais call "chuu rot" (flavor enhancer) came two full bottles of nam pla or fish sauce and the usual other ingredients of one of Thailand's favorite dishes. 

 

Thanyaporn Natthawat, 42, explained that they were not overdoing the MSG. They used a huge mortar to make 40 to 50 bags of som tam at a time.

 

This they then sold at 50 baht a bag. 

 

The process saved time. 

 

Customers at "Yai Plerng" (Grannie Fire) were happy with the taste and there was a large clientele to sample the delicious food at the stall in Amnat Charoen, reported Sanook who said that the recipe had been handed down from mother to daughter.

But what's the secret to your amazing recipe? Oh, I get it now! Anyhoo, what are people complaining about? Do they want delicious food or food that won't slowly kill you? We both know the two are mutually exclusive.

What's the problem?

Personally I don't want MSG and it does not matter if half a spoon or three of them.

But maybe Thais want MSG.

Likely the vendor wouldn't do it if the customers wouldn't like it.

And the customers would go somewhere else if they don't like the taste.

I love MSG. But it makes my hands shake and my tongue tingle, so I have to find a place to put them until the effects wear off. Win win.

Although I like street food, all the more reason to avoid street vendors and hole in the wall restaurants and move toward chain restaurants such as Sizzler and Fuji located in shopping malls that declare themselves to be MSG free.

Exactly. The point with road stalls is that they make the somtam as you like it. No sugar, no pla raa, amount of chillies etc. If people don't like it, they didn't instruct the seller.

MSG makes things taste better than they actually are.  (think about that one)

 

The stuff keeps me awake.  When they overdo it, first it tastes like too much salt, but then it takes my taste buds to a place beyond saltiness, and it really messes up my stomach.

This translated reads to me

"A chef that is using 100 out of 100 possible ingredients is bad because he uses that 1 ingredient that my bandwagon is against, he would be much better if he only used 99 out of 100 possible ingredients because reasons."

 

I'm aware of the controversy around MSG as a whole, albeit haven't read any studies to see just how manipulated the data of it is, but I'm very much in favor of "everything in moderation", be that salt, water, msg, sugar(!), coffeine, smoking or what have you.

 

Since everything kills you anyway, might as well enjoy what you have. If peoples greatest concern with buying street food is MSG, then maybe it's not the MSG one needs to worry about but a hard look in the mirror.

If I eat something with MSG in the evening, I can't sleep before the early morning. Therefore I avoid Chinese restaurants. My favorite place, the Fishkitchen in Hat Yai sells some Chinese dishes and use MSG in them. But they have a remark on their menu, asking you to to tell the cook, if you have a MSG-allergy. http://harleys.de/fishkitchen/menu.pdf

The clown would make it a success.

Don't mind a bit but a lot gives me headache and knocks me out.
In any case only a bad cook needs it our local restaurant used Zero MSG and all their food tastes great.
I would worry more about how much sugar they put.

Ah, but I have a problem for you. The restaurant selected for best Thai food in Bangkok, Nahm, was founded by David Thompson. a farang. I guess Thais can't even do Thai food right.
