Got a tried and true white bread recipe been making for years. I want to make a wholewheat / multi grain type loaf and can find plenty of recipes but not a basic ratio of how much grain you should add to the flour. For eg: 10 : 1   Flour:grain etc. My mix usually 1 kilo of flour....water, sugar, yeast etc. 2 x big loaves

 

I would probably rather keep the basic 1kg flour recipe and add to it rather than substitute flour with grain....as I know grain / wholewheat breads end up a little smaller. I was thinking of adding say 1 cups of a mix of multigrain, wholewheat, cornmeal, sesame and adding that to the 1 kilo mix. And by the looks of it when using grains for every cup of grain/meal you need to use an extra 60ml of water as the grain absorbs moisture. I would like a fairly seedy loaf. Will 1 cup per 1 kilo flour be enough?

 

Anyone have any experience / insight?
