The Motherboard on my son's Xiaomi Smartphone Redmi Note 10 Pro needed to be replaced, it was no longer working.
This part was so expensive, that he has decided to purchase a new Apple iPhone 11 instead.

Now he is asking me how can he recover the data on the Xiaomi.
Is this data on the SIM card, motherboard or in the cloud please?

As it is Android did he set up his google account and backup with it or possibly to Xiaomi Mi Cloud?

Not sure how he would then transfer it to an iPhone however....

the data is ultimately on the motherboard but if your son had cloud backups enabled then he might be able to recover photos, videos and some other data from his Google account.

If he did not set up a cloud account then recovering the data will be from difficult to impossible, with all methods requiring a hardcore tinkering with the motherboard.

Doubt it.

This is a thing of the past.

All modern smartphones store contacts in the non volatile memory (NVRAM).

All the pictures,videos etc are on the NVRAM too.

Or in a separate memory card which would be easy to remove and read 

Cloud? Only if it has been configured to upload. I don't.

Depending on how valuable the data is, he could look for a repair shop. They might have adapters to read the data from an otherwise "non working" phone.
