Mung beans fresh. Edible?

We grew some mung beans for fun. They’re starting to produce. All I see online is about bean sprouts. How about eating them like you would with green beans. Can?

I would not eat them raw, just boil them, or for something really delicious, make an Indian style "dal" with them.

Little round seeds, bit smaller than tapioca, I never ate but bought, soaked & sprouted for my small parrots,

they used to go mad over them

Here are two more variations - Salad and a curry. Asians just boil it until soft and eat with grated coconut for breakfast - nutritious, but a little bland. Some even drink the water that the beans were boiled in too. But eating raw, I don't think its nice.

It's great to have this in your garden! A good food.
