Made a nice pork chimichanga for lunch today. Nothing fancy but hit the spot.

Made this up yesterday. Nobody in my house eats beef so made it with pork butt. Stewed it up for over 3 hours and let it sit in the fridge all night. Having a bowl now. Homemade chili is nice.

Haven't tried that here, though I do miss it from Texas. They have Chili cookoffs all over although some are so hot they make Thai Chilies mild.

I knock up a batch every now and again, though I use beef and red wine and slow cook for eight hours.

It was hot today so went to a pub garden .

Today I tried my first "homemade" pizza in Thailand. Not entirely homemade, as I used a pre-made pizza base I bought from an online place here in Thailand. https://tindoro.com

So I had a good head start with a 13" Napoli base. Anyway, I used some Cirio pizza sauce, some Italian mozzarella, and some TGM spicy salami.

I cooked it on a pizza stone at an oven pre-heated to around 300 degrees F for around eight minutes. The end product was OK for an initial trial run. In the future, I'll use a little less pizza sauce and I'll add some mushrooms and maybe some black olives.

Next time, I'll remember to take some pictures.

Really late lunch or very early appetiser ...
