The Carnivore, which I would never believe is healthy long term, especially for children. That child will soon enough be a teenager, and will eat like one. You are getting enough carbs, especially with the psyllium added, for gut health. I would also like to see the results for that toddler, even though it will be that teen someday, hoping we're both here in 19 more years.Yes, there IS a 'possible' issue with processed meat, but it's still in the 'maybe' stage. We are old enough to remember when Doctors told us that butter was bad for us, so we switched to margarine. I still remember my mother mixing the little yellow dye packet included in the pure white margarine, making it look like butter. That was then. This is now. Butter is good for us! Do you remember the same issue with eggs? Only one a week, they said. That was then. Now we are told we can, and perhaps should, eat them every day! Salt? Cut it out completely, they said! But it's OK now. I eat pickles almost every day. Sauerkraut twice a week. I eat heavily salted nuts every day, and during the hot season, take salt tablets daily. My blood pressure remains around 120/75, give or take a few points. Perhaps the reduced salt intake guide is for people with hypertension and high blood pressure, and not for folks who do not suffer from it. Salt doesn't cause the problem to start. Most of us of retirement age are still planning our diets based on the Food Pyramid we were taught in primary school 65-75 years ago. There have been a LOT of changes.I, too, wonder about the Carnivore Diet for young children. But if you listen to this doctor, everything he says is backed up by peer-reviewed scientific studies, to which he links his comments. I doubt I'll live long enough to see the results, but the child is almost three years old now, eating this way since being weaned from mother's milk, and medically sound. Who knows?
September 2Sep 2 Author Just now, FolkGuitar said:Yes, there IS a 'possible' issue with processed meat, but it's still in the 'maybe' stage. Not all deli meats are the same. Some are much more processed than others. There are some cheap deli meats with artificial additives. Proper Italian prosciutto may only have some salt added and nothing else. But then even salt intake is controversial. But on low carb, maybe you need more salt. Not sure. But best to check the ingredients list.

Dr. Somebody. Turns out, his doctorate was in Library Science. Or the British diet guru who was found to have a mail-order Ph.d, and ruled that she couldn't use Dr. in her advertising.

Who knows?True, margarine was never a good option over butter. I've eaten eggs almost daily for decades, and daily since moving here. I just stay away from dairy besides cheese and yogurt, as I was, and likely am still , allergic to milk.I've eaten 4-5 times a day for 50 years, high carbs, and low fat. My blood pressure is always around 115-54 and pulse 58, Blood sugar 88 so it worked for me. Only problem was H Pylori I got living here which hurt my gut, which I'm still recovering from. Yes, who really knows? I just try to emulate the Blue Zone as much as I can here, and will totally when we move back to Texas, besides the pizza and burgers, BBQ and steaks. They aren't going to be tossed aside. I love sauerkraut but only found it on Lazada, Bavarian style, at $9 a bottle. Edited September 2Sep 2 by fredwiggy

Cabbage, salt, a bay leaf, and some coriander seeds. Doesn't get much easier than that! I do the same for Sour Kosher Dill pickles, just adding some garlic, allspice berries, and black peppercorns to the brine. (If any Americans favor 'Claussen's Dill Pickles,' that's the recipe for them.)

September 2Sep 2 7 hours ago, FolkGuitar said:When I started Keto, it was to lose weight. I weighed 40 kilograms more than was health, and my body was in revolt. I looked like a whale, felt like a whale, and was quickly losing my self-respect. I had always been athletic, but really couldn't play well any longer.Keto took the weight off quickly and easily. I could track the loss each week, seeing very positive reduction, which was motivating.Once I reached my target weight, I discovered this eating style did more for my body than just losing weight. Those little aches and pains we older folks experience in the morning were gone! Shoulders, knees, hands... all felt 'younger.' I felt younger. I broke the diet for a week (I thought I was missing pizza and pasta) and saw all those little aches come right back!So I went back into the diet and made it a lifestyle. I've been following it for over seven years now (I track my weight and blood pressure every Saturday). My weight has remained 72+/- kilo for the past 6 years. This chart starts at Week 26, a half year into Keto. I'm at Week 382 now.And this is my usual way to breakfast... two packages of deli meat, a slab of Cheddar cheese, a handful of Kalamata olives, and an avocado in season.Presumably, you felt better and were no longer in pain because you were no longer 100 pounds overweight. Carrying that kind of extra weight puts a tremendous amount of additional wear and tear on the joints and connective tissues. And perhaps the reason you started feeling bad again when you went off the keto diet is that you’ve now conditioned yourself to associate feeling better with what you eat, rather than with the fact that you lost all that excess weight. So every time you eat carbs again, you may be triggering a psychosomatic response that brings the pain back, mind-induced pain rather than the physically induced pain you were experiencing before.

Switching to whole grains would not bring the weight back along with that inflammation, so sticking with the Keto, where he is eating carbs but not many, will keep his weight down and the joint pain from re-occurring. I know joint pain, and it's as real as any pain gets, as it occurs when your mind is totally elsewhere, or when you wake up with a burn in your shoulders or knees. I've eaten high carbs all my life, as I was training 4 times a week heavy, but the joint problems came from those heavy weights and not diet, as I rarely ate anything refined the last 50 years. Inflammation is a major problem in most everyone who gets older, and more so if you eat crappy.

A more likely cause might be wheat products, rather than carbs in general. After all, I do eat carbs every day, and have none of those uncomfortable aches or pains. Yet, when I break the diet and eat bread, noodles, or any other dish made with wheat flour, by the third or fourth day of eating that way, my body starts to feel old again. It's the stereotypical 'old man' feeling. It's purely anecdotal, but after seven years going on and off the diet, the data adds up. My body tells me how I feel. And I prefer not to feel like an old man, even though I may be one! 🙂Let me recommend an interesting book. I read it after I had already stopped eating bread and noodles, and while it's not the greatest read in the world, it is accurate.'Wheat Belly: Total Health ' by Dr. William Davis, a Milwaukee-based cardiologist.
September 3Sep 3 I recently read an article how Truvia, which uses erythritol, may be linked to a faster decline in memory and overall thinking skills.

When I'm back home in Texas I'll have them add 2 Splenda or Equals to an Iced Coffee. The same for Iced Tea. For Monkfruit I just use a sprinkling.
