here is an easy recipie for a very tasty liver sausage

ingredients;-1/2 pork belly,cut into chunks

-2kg liver(flavour you prefer,i use chicken liver)

2 large white onions,cut into large chunks

-1 bulb garlic

1 bunch majoram,1 thyme,1 oregano,taken of the stalks

1 bottle red wine or port

-1 cup brandy

-250g butter

-salt,pepper,sugar,paprika to taste

place all the ingredients in a saucepan,bring to the boil and simmer for about two hours until the liquid is reduced then use a stick blender or food processor and purree,season to taste and enjoy

this recipie freezes very well and is very versatile you can add different ingrediences after blending i.e. chopped dried apricots or pistachios or other nuts,etc.to give it individual flavour
