As you have had no replies to date on your question I'll tell you what I believe to be the case.

I've used U Tapao airport but never left my car there. However, I understand that there is long-term parking available and I believe that the cost is about 30 Baht / day. I don't think that the parking is under cover and I don't know how secure it is.

You could always try Googling for more info. - someone out there will know more.

Last time we went to Koh Samui we just left our car in the main car park outside the terminal building. I asked a few people about it and no one seemed to care, and when we returned 4 days later no questions were asked and no charge made. I found this surprising as it is part of an armed forces base, but hey TiT
