landed in thailand for 2 weeks from new zealand, and booked a cheap air asia flight to hong kong for the last weekend but need to return to bkk for one more night to catch my flight home. i didnt need a visa to get in on the first place withmy passport so doi need one to get back in?

surely lots of tourists visit cambodia vietnam etc for a few days then return to bkk with british australian or nz passports

You will get the same 30 day visa exempt stamp on any entry. So no; you do not need a re-entry permit, or a visa.
