Long Hand of the Law The FDA Food Code prohibits bare hand contact with ready-to-eat foods under section 3-301.11 Preventing Contamination from Hands. —Lisa Whitlock, regional food specialist, FDA, email March 8, 2008 The bare-hand issue is nothing new. Extensive FDA research concludes that many viruses are spread through hands, and food is an excellent vehicle for pathogens, so workers are required to use serving utensils, tongs, single-use gloves, deli tissue or dispensing equipment when touching it. When the new Cal Code went into effect, however, it replaced the California Uniform Retail Food Facilities Law (CURFFL) as the governing legislation for retail food facilities throughout the state. The goal was to update food vendor rules to bring them in line with national guidelines focusing on current risk factors for food-borne illness as identified by the Centers for Disease Control. It was an enormous undertaking, spanning a full decade of discussion between numerous boards and restaurant industry professionals throughout the state. When the California Department of Public Health drafted the final language, it resulted in an exhaustively detailed 132-page manual. Before it was unveiled, chefs and kitchen workers were encouraged to attend county food handler's programs outlining the changes. There they learned that while the Sonoma County Environmental Health Division (SCEHD) now "discourages" using bare hands, according to division director Walter Kruse, it does in fact allow it. Except that maybe it doesn't. Or maybe, depending on how you interpret CURFFL, it has all along. Edited August 5, 2009 by gatorhead333

Thakkar
Patrons at a table in a restaurant watch approvingly as the conscientious waiter uses tongs to serve them bread. He even uses his tongs to serve them the cool disinfected towels to wipe their hands with. The patrons express their approval to the waiter and he says that, yes thy are required to avoid use of their hands. "For example," he says, "see this string sticking out of my zipper? Well, the string is tied to my penis and if I need to go, I use the string to pull out my penis to pee." "Impressive," says the diner. "When you're done peeing, how do you put it back in?" "I don't know about the others," replied the waiter as he shot a few furtive glances around the dining room, "but I use these tongs."

Certainly seems this member has shares in the company to be promoting this fast food joint as much as he is. Mike's Burgers are not made locally. They are made by American specialist burger company in Bangkok. The last process they go through is a comprehensive bacteriological test. They are 100% prime beef (guaranteed), with 20% fat, which is nesessary. A burger without fat would be hard, dry and not too tasty. He certainly knows every last detail. keo
WEnt to Mikes on Nimman last night for the first time in over a year, and was reminded why I don't eat there - tasteless crap. And not exactly cheap either - 177 Baht for the original 150 gram burger set. Next time I have a craving for junk food, I'll save some money by going to McDs. But what about Farangdanny, the new owner of Mike's Burger, he is the new owner, I am guessing. Has anyone tried the new burger? I have to say that I am going to do it. He says 8 different seasonings? Well I would hope that 8 seasonings would be different. Otherwise it would be 7 seasonings or 6 seasonings with some that were the same??????? What about the gloves? Personally, I say get rid or the gloves if you are using them, unless you are using 7 seasonings and when staff is going to the loo with the gloves on say, we use all the 8 different seasonings. Might be good for business.
