The term skirt steak refers to two cuts of beef steak, one from the plate and one from the flank. Both are long, flat cuts that are prized for flavor, but are tougher than many other steak cuts. Chi Flyer Posted May 8, 2022 Share Posted May 8, 2022 Some good info guys. I am a fairly serious home cook and have been struggling trying to find both skirt and flank steak on a regular basis. I have seen it at times at VM, but not dependable enough for the weekly shopping list. Sounds like Makro frozen is my best bet.
