My retirement extension is due on 31st July.

1.Can I get my letter which gives income (from UK embassy) about 3 weeks before? I am busy, and it would be easier to get it this week.

2. The 31st July is a Saturday. Should I go to Immig that day? Could I even go on Thurs 29th?

How long? -- That's one of those every-IMM-office-is-different type questions.

Your issue of extension of stay based on retirement presents an inconvenience because "I am busy"; if you screw that one up, however, you may not be busy much longer.

Go ahead and get your income letter this week, and you can also apply for the RETIREMENT EXTENSION of your non-O visa this week if you care to. Extensions are allowed up to 30 days prior to expiry, and they're dated from the expiry date, not when you do the extension.

Get your letter now and make your extension of stay now. It should always be done a few weeks early as in the event of something being required you then have time to obtain.

There is no problem with letter being 3 week old but in this case you are already within the normal 30 day window to take care of the extension of stay so best to do so. You lose nothing by doing early as the date will remain July 31.
