At this time of the year, around mid-December, I am receiving four whole fresh duck livers from Europe.

DHL close to home being still under floods, I did not take the risk to order them this year.

Any idea where to get some -at least one- in Bangkok?

you can get duck liver if you talk to the chef or manager of a Thai restaurant. but they are a fraction of the size of a European force fed duck or goose and of course they don't have the required fat content to make a "real" pâté de foie gras.

p.s. about two years ago i saw raw duck liver in Foodland, Pattaya.

pps. my mouth is watering.

They are available frozen in many supermarkets in Bangkok including Villa Market, Gourmet Market and Central Food Hall. If you're in town this weekend, you can get them at the Bonjour French Fair at the Queen Sirikit Center. Big C is promoting their French products and may carry the raw foie gras as well.

Frozen incidentally works just as well as fresh, whether you're making terrines or pan-searing slices of it.
