mads Posted September 4, 2012 Posted September 4, 2012 I've been trying to bake some buns and bread with the only yeast I could find. It is a flaky/powder kind of yeast. So far it has not been possible for me to make the dough grow from the yeast. Now I want the real deal, the yeast I'm used to work with. Anyone knows where to find yeast cake, I believe it is called. The moist yeast that comes in cubes ?
thrilled Posted September 7, 2012 Posted September 7, 2012 Remember ya want it to be around 80-90 degrees for the bread to rise.I(n an airconditioned home ya might have the airconditioning down to much.
RabC Posted September 9, 2012 Posted September 9, 2012 I use German yeast granules bought at a local supermarket and have had no problems with dough not rising.
butterisbetter Posted September 10, 2012 Posted September 10, 2012 Any of the instant yeasts should work. Maybe you bought a very old package. I have seen cake yeast in Chiang Mai at Bakersmart. They keep it in the freezer.

We put some bread doughs in the refrigerator and let them do a slow rise for as long as 36 hours. The general rule is for every 9 degrees centigrade rise in temperature, the rising time will be cut in half.
