Today , in the change we got from MM Mkt , was a different back on the 100 baht note. Instead of the normal image of Rama V, the image is of HM The Prince] . Does anyone know if this is a new version of the 100 B note, or did someone slip one over in my change?

Yes, those are new 100 Baht banknotes.. Was in the news 1-2 months ago. No worries..
