this is pretty confusing!

i earnt enough in december to make the Uk settlement requirements (based on handing in 6 months wages slips)

but...

because of christmas my wages wasnt paid until the accountants re-opened in january and was put threw as a back payment on januarys wage slips.

i earnt in december so will this still count as decembers or will it be counted as january? the wage slips state its a back payment and the accountant has said they will give me letter comfirming its back payment from december.

im pretty worried that the UKBA wont accept this and only take into account what i recieved in december.

do you think i will be ok?

This is one of those times when common sense should be used ( by the ECO), and probably will. As long as everything is logically explained in a supporting letter ( one from the accountant, and one from you), then it should be okay.

Even more common sensical (?) is that, if the ECO decided to refuse because he didn't understand the explanation, then you would have a right of appeal against the decision. UKBA would let it go to appeal as the they know they would lose.

Anyway, the requirements state :

(a) Wage slips covering:

(i) a period of 6 months prior to the date of application if the applicant has been employed by their current employer for at least 6 months (and where paragraph 13(b ) of this Appendix does not apply);

So even if you have 2 months, or whatever, salary shown on one wage slip, you still have, at the end of the day, "wage slips covering a period of 6 months..................."

I have been in my current job for 5 months and i earn more than the £18,600 and have done prior to this.I am going to see somebody about a job offer tomorrow as my job at the moment is not very secure and i do not want this to effect the outcome of the visa and the new offer is better money.

Will the change in job effect my wifes settlement visa application?

As I understand it; as long as you meet the minimum income figure then that is fine. That you changed employers during the period should not be a problem.
