I'd love to see a place much less expensive than Mantra offer Alaskan King Crab legs.

+1 - A place that specialised in good seafood; imported oysters, mussels ,cold water fish (snapper,sole,cod etc.)

So many. So many. I think this idea has been done before, like a WISH LIST, but I thoroughly endorse the notion.

Anyway, to start:

Mexican food of the quality of La Monitas in Bangkok. Nothing like that here ever as yet.

Peruvian restaurant featuring raw fish and shellfish CEVICHES using local fish and adapting the recipes to the local ingredients.

A QUALITY fast food falafel (cooked fresh with clean oil) specialty restaurant with lots of salads and toppings similar to what you would find in Amsterdam. It couldn't be cheap but the market would be for the much better quality.

A Sechuan Chinese SPECIALIST with real Chinese Sechuan chefs (not American Sechuan food) featuring hot and numbing recipes Sechuan peppercorn recipes, Sechuan hot pots, etc. Most westerners (and Thais) have never even tasted food like that, but a large percentage become ADDICTS once they get the chance.

A SPECIALIST Korean fried chicken restaurant marketed clearly to the local market (Anglo, Thai, and Russian) not only Koreans.

Let me add one more suggestion that is a bit off the "new" food topic, but directly related. Sure would be nice if we could get a few good restaurants on the Darkside. I'm talking about a couple of nice "upscale" places that aren't all the way down on Lake Mabprachan; an S&P for good food & value without the extra cost of "atmosphere"; and a Subway for quality fast food. A Burger King wouldn't hurt either; but PLEASE, no McDonalds or KFC! :-) It would also be nice if "New York Pizza" (3rd Road) could afford to open a branch on this side. ... And, of course, as I throw in at every opportunity, WE NEED A FULL SIZED SUPERMARKET!

OK. this one is almost too obvious.

A real quality authentic BAGEL specialty shop, boiled bagels done in the shop, sold in front with traditional and creative toppings.

I know mainstream Americans would go for that but not many here. Would mainstream Russians? I think they would but you'd have to check that out.

I understand that feeling but I really don't know. The key is whether the Russians would go for it. It is a food type associated with Eastern Europe historically. Someone would have to actually do some scientific market research to figure that one out. Obviously without Russians it would struggle so at the very least it would have to be targeted very clearly at Russians. Or maybe be creative. Like do the bagel thing but also do the best pelmeni in town! Everyone's got pelmeni but where is the best? That's just one idea but creative business people can sometimes solve these problems. With the pelmeni gimmick probably lots of non-Russians would be tempted to try the great pelmeni and probably some Russians who didn't think they ever wanted a bagel meal would try a bagel meal. I actually see a connection, bagels and pelmeni as both use dough, eh? Edited by Jingthing

OK, here is another rather obvious one.

A REAL Vietnamese Pho specialty shop.

Yes you can buy soup called Pho in town but nobody is doing a real Pho broth.

Mostly the soups are catered to Thai tastes and Thais are not into and culturally don't get the concept of LONG simmering, complex steps, broths.

Then you need to use better BEEF.

So the Pho offered would not compete with Thai noodle soups or Thai style Pho in price so the market would basically not be to Thais at all. Most Thais prefer their OWN noodle soups and wouldn't see the value in paying more for something that isn't what they prefer anyway.

In this case I think the market for this better real Pho is mostly Americans and western Europeans.

A DEDICATED higher quality Indian BUFFET restaurant. (Buffet only, no menu.)

Lunch AND Dinner.

Sophisticated authentic and mostly modern Indian cooking (not UK Indian), talented Indian chefs, varied and bounteous curries changing DAILY, fresh nan served at the table, one portion of fresh tandoori chicken served fresh and SIZZLING at the table.

Large variety. Set up for big volume like a Sizzler chain restaurant.

(Kind of like a build it and they will come concept, huge risk, potential huge reward.)

The price would have to be higher than the famous Indian group tours 200 baht dealios. More like 350 baht.

Could also see doing a "luxury version" higher price on weekends only with live Indian music, Bangkok hotel style.

Buffets like this for a similar price are available in many big USA cities and the good ones fill their tables. Possible here or not?

Just as a quick pointer to uneducated snobs there are Michelin starred Indian Restaurants in London. To show my snobbery how can you ever call a buffet (canteen food) sophisticated. I stopped queuing for my food when I left school.

Don't get your panties in a twist. Let me clarify. Chicken tikka masala does not need to be on the buffet everyday. I know perfectly well there is world class Indian food in the UK. I meant stereotypically Britified Indian food. That does not need to be widely exported to Pattaya or really any country in a buffet concept as I've proposed. Do you think Indians in Mumbai or Indians in San Francisco or Indian tourists in Pattaya are yearning for British style Indian food? No, they're not. That's a specifically British thing. Get the picture? Anyway, I think you're just trying to be argumentative. Yes, my opinion is a huge investment Indian buffet style restaurant as I've pictured would actually be DAMAGING their brand if they marketed as a UK style Indian buffet. Edited by Jingthing

The ignore function is your friend. If you don't find value in my posts, you're politely invited to not read them. I actually don't think most westerners or Thais do know what real Sichuan food actually tastes like (for example, the mouth sizzle thing) and I think that's pretty much an objective fact. You say "we" know. Who is we?

You know, if YOU have any ideas to contribute to the suggestions requested by the OP, I think they would be very welcome. Anything?

I want expand a bit on what I mean by "real" Sechuan food. It's a rather major trend in America, not sure about Europe. This picture show tells the story:

We lived in Shanghai for 15 months, and I really loved the Sechuan food that was available in many restaurants there.

No gun. My wife traveled here in 1996 from our California home, a month before I followed with our household goods. She selected the home we bought, and have lived in since. I rather doubt that you'll find a very large percentage of falang or mixed families who choose to live in the squalor and madness of downtown Pattaya.

True. But I enjoy going to a restaurant, and having a pizza fresh out of the oven. Always, of course, allowing time to prevent the hot cheese from scorching the roof of your mouth! :-)
