My girlfriend Thai had successfully obtain her touristic ( turismo ) schengen visa from Italian Embassy.

She provide a booking flight ( not ticket ) from 31 March to 6 April, hotel booking & inssurance etc. also

At the visa is wrote well "8 DAYS", and valid FROM 30 MARCH to 21 APRIL.

So exemple, what will happen if she change her itinerary and start from 5 APRIL to 12 APRIL exemple. and she can also make new hotel booking & change her inssurance of course.

Did the border will make problem and deny her entry at the Italian passport control ?

She won't have a problem, travel plans can and do change.

As long as at the Schengen Border she can supply details of booked hotels, insurance and travel out of Schengen if asked, which I doubt they would do.

You are probably aware that the eight days means she can only spend eight days in Schengen during the validity of her visa.

Ok, that's very great to knows, I was confuse & think that maybe the control passport officer at the border, he had access at the database of what the embassy save as the booking and getting trouble if it doesn't match.

As said above this will not be a problem: the visa was granted
