The local Thai consulate needs proof of travel to and from Thailand to apply for a tourist visa.

I'll be heading to BKK on September 13th and fly back to AMS on December 1st.

The duration of stay is 79 days so can I apply for a single entry tourist visa and add a note that I will extend the visa at imm. for 30 days after that? Is that allowed or does one really need to leave the country within 60 days?

You can apply for a 30 day extension of your 60 day entry at immigration. You certainly do not have to leave after 60 days.

If they insist on a ticket out at 60 days you could look for a low cost one way ticket to a nearby country to show them.

Usually a printed reservation with locator is enough. E.g. a reservation made over the phone, then emailed to you.
