As many or as few as you like !

Any Visa obtained will have an expiry (enter before date)

The visa must be used prior to its expiry date.

I mean doing a visa run in Vietnam and come back... If I go to my embassy in Vietnam, will they give me a visa to Thailand there, or I need to go back Europe?

And when I come back in Thailand I will have 30 days or 15 days? Or 3 months?

Your Embassy, will for certain, not provide a Thai visa!

You will need to apply for a Thai visa at a Thai Embassy or Consulate.

Entering Thailand with a tourist visa will secure an initial 60 day stay.

Entering without a visa will permit a "visa exempt" entry of 15 days or 30 if you are a citizen of a G7 country.

If you want to stay more than 30 days here when you return you should apply for a tourist visa at the Thai consulate. As said you will get a 60 day entry from a tourist visa that can be extended for 30 at an immigration office. See Latest Reports Of Getting A Visa In The Region for info.

I assume you are flying back into here. With no visa you will get a 30 day visa exempt entry that can be extended at an immigration office for a fee of 1900 baht.

Not sure if still the case but 3 years ago, the HCMC Thai Consulate required seeing your ticket going to Thailand prior to issuing a visa. Application had to be made by 1130am and was issued after 1:00 pm the following day.

Why on earth they would want to see your ticket going to Thailand is anyone's guess.

If they issue the visa, collect the money, I'm sure they couldn't care less if you don't enter Thailand.

I bet that was a 'one off' for some reason.

Yes - it was the worst experience at any Thai consulate ever!

The woman had a chip on the shoulder. she wouldn't understand the concept of airmiles...

Here is someone who loves to say no.

When I arrived near lunch time, there was no one else waiting though.

My guess: discourage backpackers travelling throughout Cambodia or w/o a set itinerary.

Other applicants have reported the same requirement.

I remember having to scramble around between the Bangkok Airways office and the Consulate...Catch 22...Airline did not want to issue ticket without visa, consulate would not issue visa without the ticket; not a fun day.

You can easily buy a ticket, one way or return on the airlines' website and there is never a mention of needing a visa. The consulate is another story but to satisfy them you could always book a THAI Airways ticket for some future date, select the "pay later" option, print that out and never even get on the flight. Problem solved and apart from maybe a small printing cost at your hotel or internet cafe, it costs you nothing.
