From bkk I would go to kanchanaburi, not much of an exiting ride though but I like the place. Otherwise drive the backstreets to nakon nayok

There are not much options and it depends also how many km you would fit in a day. A day trip for me is mostly around 500km so look around on Google maps in a radius of 250

Kanchanaburi. Go out around the Burmese border area up towards Bong Ti.

Ratchaburi up to the Burmese border and back.

Khao Yai.

I'd go with one of the first two.
