If she asks you for some money for her family , You give it and when you turn up at her home village and they put on a feed and tie some string around your wrist you are consider married if you know about it or not, believe it or not, no monk required it seems

A village or Temple wedding is not a legally registered wedding unless you both attend the local Amphur and sit through the process. If she has never been 'legally married' her ID card will have her maiden name on it. When you register your marriage at the Amphur Office her ID card chip is read. If she is legally tied up in 'anything else' it will be logged on her ID.
