correct, and whatever the spirit is distilled from should be pretty sugar free as the yeast converts it to alcohol and CO2 during the fermentation process.

I was taught at cookery school that if something defrosts, it is ok to refreeze AFTER you cook it well.

That is a WHOLE 4 LITRES per week. Who is going to go to the trouble of doing that, even monthly @ 16 litres.
