It is normal for an agent to keep hold of your UK passport when applying on your behalf but only for their convenience, they don't send it to the UK for any purpose. It is still cancelled at VFS when they pick up your new passport exactly as it would be if you applied directly.

As it means him basically getting a loan from Krungsri they will want all the usual checks and guarantees for that. If you intend to remain in contact with him it might be better/easier to have him pay you the monthly payments, or even better just a one-off and do the transfer once your loan is paid off.

You keep the old passport, nothing is physically done to it until the replacement arrives. Yes it is cancelled in the UK "system" when the application reaches there but they do not tell anybody unless they are specifically asked. So whilst it is true that is is not officially valid for travel nobody outside of the UK will know that, so it's a risk you may or may not wish to take.
