The passport issue is has been the same since 2013. It is not only your office wanting it. If you do not have 12 months of passport validity when you apply for a extension it is only be issued to the day your passport expires and then you have to apply for new extension with all the normal documents. -
Normal is that you can do it about 2 weeks before the 45 days end.

The rules for entry if not fully vaccinated state you must have a covid 19 test no older than 72 hour prior to departure. -

You can cross the border turnaround and come right back. Or if you want to stay overnight. -
The 45 day visa exempt entries start on October 1st and they can be extended for 30 days at immigration.

Unless Myanmar opens soon the nearest would be Cambodia or Malaysia (train from Hua Hin to the border). -
If you entered with re-entry permit a TM30 report is not required after entering the country.

You could apply for a one year extension based upon being the parent of a Thai. You would need 400k baht in the bank on the day you apply (at some office it may be 2 months). You will need to legitimize your parenthood to apply it it if not married to their mother. Info for doing it is in this topic.

You can register for online TM30 reporting if you have a rental agreement and etcetera to do it.

Normally you cannot do a border hop to change passports. Immigration on both sides of the border will want to see departure and entry stamps in the same passport. You will have to fly out and back ot do it. Borders crossings are still doing the TM6 but you will not get one when you enter by air. A immigration will not ask for one now.

Not all embassies will legitimize a document (the example of the UK embassy is wrong since they no longer do it). The Australian embassy will do it. You should check the embassy website since some are doing somethings by mail now. You would first need to have your marriage certificate translated to Thai and then certified by the Department of Consular Affairs of the MFA. You need to have your marriage certificate legalized and translated to Thai to register your foreign marriage at a Amphoe to get a Kor Ror 22 marriage registry if you want to apply for a extension based upon marriage. Why? -
The possessor of a residence can also do the the TM30 report. It is not solely the owners responsibility. A copy of the receipt for a TM30 report would be accepted for the proof it was done.
